- (3 cups) Hash Browns
- (1 lb.) Breakfast sausage
- (2 cups) Cheddar Cheese - shredded
- (7) Eggs
- (3 cups) Milk
- (1/2 tsp.) cayenne pepper
- (1 tbsp.) Dijon mustard
- (1 tsp.) Salt
- (1/2 tsp.) pepper
Spray a 9x13 baking dish with non-stick cooking spray.
In a large skillet over medium-high heat, add the breakfast sausage, using a wooden spoon break up sausage into crumble sized pieces, cook until browned, about 5-10 minutes.
Into the prepared dish, layer the hash browns, cooked sausage and the cheese.
In a medium bowl, mix together the eggs, milk, mustard, salt and pepper. Pour over the potatoes, sausage and cheese.
If you are making this the night before, cover with plastic wrap and refrigerate. In the am, pre-heat the oven to 350*, bake for 1 hour ( or until bubbly and hot) , serve hot.

P.S. This freezes very well. If we can't eat it all, I cut into serving sized pieces, wrap each piece up in saran wrap and place them all in a freezer bag. We just defrost each piece in the microwave till hot.
